Cucumbers that were firm become soft and yellow quickly due to a storage mistake: placing them near a melon. Melons release ethylene, a gas that accelerates ripening of sensitive vegetables like cucumbers, lettuce, and spinach. This gas accumulates in the refrigerator's vegetable drawer, reducing their shelf life. Other fruits such as bananas, tomatoes, avocados, apples, pears, and peaches also produce ethylene.
